FLORIDA’S LARGEST GINGERBREAD HOUSE AT THE RITZ-CARLTON, AMELIA ISLAND

 

The Ritz-Carlton, Amelia Island tradition continues with the presentation of Florida’s largest Gingerbread House.  Each year our pastry chefs delight our guests with the aroma of gingerbread and visions of make believe.

Designing the Gingerbread House requires a lot of gingerbread, chocolate,  creativity and, of  course, tender loving care.  The Gingerbread House will be on display November 21st  until December 27th, 2001.   Our recipe includes:

300 LBS. OF LIGHT BROWN SUGAR
7˝ LBS. GROUND CINNAMON
450 LBS. GRANULATED SUGAR
150 LBS. POWDERED SUGAR
1,200 LBS. BREAD FLOUR
2 LBS. GROUND ALLSPICE
2 LBS. GROUND CLOVES
5 LBS. GROUND GINGER
300 LBS. SHORTENING
15 GALLONS MILK
90 LBS. MOLASSES
2 LBS. NUTMEG
435 EGG WHITES
3,000 EGGS
